whitebait fritters

With the name of whitebait, also called infant, juvenile, whitebait, Bianchini, etc ..., are commonly referred to the young of sardines and anchovies.
With these minutes and delicious fish, various dishes are prepared, including some great pancakes, perfect to serve as an appetizer or main dish during a meal of fish.
for about 40 pancakes
• anchovies (anchovies)

300 g • 1 clove garlic
• Flour 150 gr
• Milk (or water) ½ cup powdered baking powder •

■ Preparation
Put the whitebait in a bowl and wash them very gently with cold water (1), eliminating any impurities, then let them drain very well (2). Shelled eggs in a container (3), and then whip, stirring constantly, add the flour
(4), milk (5), grated cheese (6), chopped parsley (7), salt, pepper, crushed garlic (8), and finally the baking powder (9).
You must obtain a thick batter (like glue, for instance), so if the mixture is too liquid, add a little 'flour, otherwise, a bit' of milk or water.
Let the mixture rest for half an hour at room temperature and then add the well drained whitebait (10), mixing gently with a wooden spoon. Pour oil in a pan and when it is hot, take the dough and pour a spoonful of whitebait in the oil (11), brown the pancakes on both sides (12) and then put to drain on paper towel. Whitebait fritters served hot, but be aware that cold, are even more good!
